Ingredients

  • 8 lamb chops
  • 3 cloves garlic, crushed
  • 2 tbsp olive oil
  • 1 tsp dried rosemary (or 1 tbsp fresh, chopped)
  • 1 tsp dried thyme
  • 1 lemon, juiced
  • Salt and pepper, to taste

Method

    Mix the garlic, olive oil, rosemary, thyme, lemon juice, salt, and pepper. Coat the lamb chops well and leave for at least 20 minutes — up to a few hours in the fridge if you have time.

    Get a griddle pan, flat pan, or grill very hot before the chops go on — a good sear needs real heat.

    Cook the chops for 3-4 minutes per side for medium, adjusting slightly for thickness and your preferred doneness.

    Let the chops rest for 3-5 minutes before serving so the juices settle back into the meat.
