Lamb chops are one of the fastest cuts to cook well, which makes them a good option for a weeknight that still feels like an occasion. This marinade is simple on purpose — the lamb does most of the talking.
Ingredients
- 8 lamb chops
- 3 cloves garlic, crushed
- 2 tbsp olive oil
- 1 tsp dried rosemary (or 1 tbsp fresh, chopped)
- 1 tsp dried thyme
- 1 lemon, juiced
- Salt and pepper, to taste
Method
-
1
Marinate
Mix the garlic, olive oil, rosemary, thyme, lemon juice, salt, and pepper. Coat the lamb chops well and leave for at least 20 minutes — up to a few hours in the fridge if you have time.
-
2
Heat the pan or grill
Get a griddle pan, flat pan, or grill very hot before the chops go on — a good sear needs real heat.
-
3
Sear the chops
Cook the chops for 3-4 minutes per side for medium, adjusting slightly for thickness and your preferred doneness.
-
4
Rest briefly
Let the chops rest for 3-5 minutes before serving so the juices settle back into the meat.
-
5
Serve
Serve with a simple salad, grilled vegetables, or roast potatoes.
